Chicken and Rice
Ingredients
1 cup rice
2 cups chicken broth
1 tablespoon butter
1 cup chicken, shredded
1 cup veggies
Directions
- Cook rice and veggies in the chicken broth and butter until tender.
- Add chicken and stir.
- Eat hot!

One cup of chicken is about the amount you get off a chicken leg. I normally use dark meat for this recipe.
Make too much? Chicken and rice can be saved and heated the next day for a quick meal.
