Chocolate Peanut Butter Cupcakes

Who doesn't like peanut butter and chocolate?  (Ok, so I know a few people who do not enjoy this delectable combination, but this recipe is not written for them!)  I made these cupcakes for the Craft Fair that they are holding at my local church in the morning.  I always make something for them to sell when they have such events.  I wanted to make something different than my usual lemon blueberry bread or pumpkin bread, so I decided to try these cupcakes.  I had almost all the ingredients on hand, so I thought this would be perfect.  The recipe for the peanut butter cake came from the Betty Crocker website.  I used the recipe exactly, except I did not use a Betty Crocker cake mix.  The chocolate icing came from allrecipes.com.



Peanut Butter Cake
Ingredients
1 box yellow cake mix
1/2 cup peanut butter
1 1/4 cups water
1/3 cup vegetable oil
3 eggs

Directions
1.  Preheat oven to 350 degrees.
2.  Mix all ingredients together with a mixer.  (I used low speed for 2 minutes, until all the peanut butter had incorporated into the mix).
3.  Bake for 10-15 minutes, or until a toothpick can be inserted and come out clean. (Honestly forgot to time them, but I'm sure the last batch cooked in less than 15 minutes).

Makes 2 dozen cupcakes

Chocolate Icing
Ingredients
1/2 cup melted butter
2/3 cup unsweetened cocoa powder
3 cup powdered sugar
1/3 cup milk
1 teaspoon vanilla

Directions
1.  Mix all ingredients together until smooth.

Notes
If it seems too runny, add a little more powdered sugar until you have the consistency you need.  I ended up adding about 1/4 cup more to get it stiff enough to pipe on the cup cakes.  If it seems too thick, add a little milk.  Just remember that a little bit can go a long way!

I garnished the top of my cupcakes with a mini Reese's cup and some mini Reese's Pieces.

How much did this recipe cost?

Peanut Butter Cake
1 box yellow cake mix = $1.00
1/2 cup peanut butter = $.50
1/3 cup vegetable oil = $.15
3 eggs = $.42

I know that some cake mixes costs more than a dollar, but I only buy them when they are on sale for that price.  Today I only paid $.79 for the box of cake mix I used.  In total the cake itself costs $2.07.

Chocolate icing
1/2 cup melted butter = $.50
2/3 cup unsweetened cocoa powder = $.88
3 cup powdered sugar = $.81
1/3 cup milk = $.08
1 teaspoon vanilla $.38

In total, the icing cost $2.65 to make.

The whole recipe, minus the garnish, cost me around $4.79.  Each cupcake costs ~$.20.

Fudge Filled Cookie Cups

So, one day I had a craving for fudge.  Not just any fudge, but my grandmother's fudge icing.  I also needed to make something for a pot-luck meal, and thought why not create something with this fudge icing I've been craving so much.  Well, what I came up with is pictured below!


Ingredients:
Favorite cookie dough
1/2 recipe chocolate fudge icing

Directions
1. Take your cookie dough and form the dough into 1 inch balls.
2. Place the dough into a lined mini muffin tin.
3. Bake cookies (as directed) until just done, but not too done.  Once out of the oven, depression will form in the center of the cookies, creating a cup like shape.
4. Fill the depression with fudge icing, about 1/2 tablespoon, depending on the size of the depression.
5. Let fudge firm up before serving.

Notes
Servings per recipe depends on the amount of dough you use.  I used 1/2 a recipe form the back of a chocolate chip bag and had a lot of fudge icing left over.  I made 24 cookie cups.  Using 1/2 recipe of fudge, you could use a whole cookie dough recipe and still have enough icing.

Chocolate Fudge Icing

This has got to be my favorite icing.  I love to lick the pot when it is done and will even eat the icing plan, without any cake.  It is THAT good.

Every year for my birthday when I was little, my grandmother would make me a chocolate pound cake with this icing on top.  She would also fill the hole inside the pound cake with this icing.  I would always scoop out some from the middle every time I got a piece of cake.

Ingredients
2 cups sugar       
5 oz evaporated milk
10 large marshmallows
1 stick butter
6 oz chocolate chips

Directions
  1. Bring sugar, milk and marshmallows to a boil, cook for 6 minutes. (stir constantly)  
  2. Take off heat and add the butter and the chocolate chips.  
  3. Let icing cool for a little while, a 2-3 minutes.      
  4. Then, beat the icing until it looses part of its glossiness.
  5. Spread on your favorite cake!

Notes
One large marshmallow = 13 mini marshmallows, so if you only have mini marshmallows you will need 130.

This recipe can also make fudge!  Just place aluminum foil in a 9x9 pan.  Pour the icing in the pan and set in the fridge until hardened.  Cut into squares while it is cold.  I would recommend storing the fudge in the fridge so that you can actually pick it up to eat.  It is okay to leave it out. You will just have to eat it with a spoon.

Granola Bars

I love granola bars, but they are always so expensive in the store.  I received this recipe in a mailer from Kroger about 2 years ago when they were doing their "Kid Approved Snacks" campaign.  I saw this and tried it and fell in love with this recipe!  This particular picture shows some I made for St. Patrick's Day.  I used orange and green m&ms and used dark chocolate chips. 



Granola Bars
Ingredients
2 cups quick-cooking oats
1/2 cup brown sugar
1/2 cup honey
1/2 cup of peanut butter
3/4 cup chocolate chips

Directions
  1. Line a 9x13 in pan with foil and lightly spray with cooking spray.
  2. Mix all ingredients together and press into the pan
  3. Bake at 350 degrees for 18 minutes or until lightly golden brown.
  4. Let cool for 5 minutes before cutting.
  5. Store in air-tight container.
Notes
Make 16 rectangular bars.

You can make just about any kind of granola bar that you want.  Just substitute the 3/4 cup of chocolate chips for anything you like.  Just make sure whatever it is, it is only 3/4 a cup.

Peanut Allergy?  Just substitute the 1/2 cup of peanut butter for 1/2 cup softened butter.  The taste will be slightly different but the bars will still turn out great!

Is homemade worth it?

2 cups quick-cooking oats = $.92
1/2 cup brown sugar = $.215
1/2 cup honey = $1.50
1/2 cup of peanut butter = $.278
3/4 cup chocolate chips = $.937

One recipe costs $3.85, so one granola bar = $.24.

Normally when I buy granola bars, I buy Nature Valley. They costs $3 for 6 bars.  That is $.50 per bar, which is more than double the price of making them homemade.

The price of the Quaker Oats granola bars are very comparable to these.  At around $2 a box for 8 bars, you would pay $.25 per bar.  The size of the Quaker Oats granola bars is significantly smaller than the homemade ones.

Keep in mind the cost of making these will change if you substitute something different for the chocolate chips, or if you purchase any ingredients on sale.

Strawberry Cake

This strawberry cake recipe is one I got from my grandmother and has been a family favorite ever since I was little.  If you like strawberries, then this is the cake for you!


Strawberry Cake
Ingredients
1 box white cake mix
¾ cup oil
3 oz pkg strawberry Jello         
4 eggs
8 oz frozen strawberries   
½ cup water

Directions
  1. Beat Jello, cake mix, oil and water in a mixer until smooth.
  2. Add eggs and mix well.
  3. Mash strawberries (have the strawberries at room temperature) and fold them into the batter.
  4. Grease and flour 3 round cake pans and evenly divide the batter.
  5. Bake at 350 degrees for10-15 minutes or until cake just pulls from the side of the pan.
Notes
You can use any icing you want.  This time I used my grandmother's strawberry butter cream icing recipe.  You can also use a strawberry cream cheese icing or even a chocolate icing.

Save the other 1/2 of the strawberries for the icing if you are making a strawberry flavored icing.

Strawberry Butter Cream Icing

Originally created to top a strawberry cake, it can work just as well on a vanilla cake or a chocolate cake. 

Strawberry Butter Cream Icing
Ingredients
8 oz frozen strawberries
1 stick room temperature butter   
1 lb powdered sugar

Directions
  1. Warm strawberries, or have them at room temperature.  Drain the juice but save it!
  2. Beat butter, powdered sugar and strawberries together.
  3. Slowly add the strawberry juice until you get the right consistancy.
Notes
If your icing gets too runny, just add some more powdered sugar.  If it is too thick, add more juice.

Makes enough to ice a 3 layer cake.

Congo Bars

I always describe this recipe as a giant chocolate chip cookie.  It is one of my favorite recipes that my grandmother makes when we come to visit. She brought a large container full of these delightful desserts when she came a few weeks ago. 



Congo Bars
Ingredients
2/3 cup butter  
1 lb light brown sugar
3 eggs                   
2 2/3 cup self rising flour
1 cup chopped pecans (optional)
1 pkg (6oz) semi-sweet chocolate chips

Directions
  1. Preheat over to 350 degrees.  
  2. In a large sauce pan melt butter.  
  3. Mix the brown sugar with the margarine, cool slightly.  
  4. Add eggs one at a time and beat well.  
  5. Add flour, mix well.  
  6. Add chocolate chip and nuts, mix well.  
  7. Grease and flour a 10X15X2 pan.  
  8. Bake for 30-35 minutes.
Notes
This recipe makes 36 squares.

They are best fresh.  If they start to get hard, just stick a bar in the microwave for 10 seconds to make it soft again.

Pecans are about $6 a pound, so one pound = 16 ounces and 1 cup is 3.5 ounces so there are approx 4.5 cups in each pound.  So, one cup = $1.33.

Cinnamon Rolls with Glaze

Cinnamon rolls are one of my favorite desserts/breakfast items to eat.  I could eat them everyday!  I love the ooey gooey texture and the cinnamon-sugar taste.  Growing up, I only had cinnamon rolls out of a can or from a bakery.  I never had homemade cinnamon rolls before getting married.  After getting married, I tried several recipes to make them myself, but none of them turned out quite right.  The taste would be there, but the texture would be wrong, or the texture would be good but not taste.  Well, I finally found a recipe that encompasses everything I love about cinnamon rolls.

I used aspects from the various recipes that I liked to create this combination for, in my opinion, the perfect cinnamon roll.  I found the pizza recipe at Lauren's Latest.  I found the filling recipe at Sweet Tea and Cornbread. The glaze recipe I basically already knew.  When all of them were mixed together, I made what is pictured below.



Cinnamon Rolls
Ingredients
1 recipe pizza dough
1 cup sugar
1 cup brown sugar
2 teaspoons cinnamon
2 Tablespoons butter, melted
1 recipe vanilla glaze
 
Directions

  1. Stretch or roll dough out into a rectangular shape about 1/8 to 1/4 inch thick. 
  2. Spread melted butter across dough.
  3. Mix cinnamon and both kinds of sugar and sprinkle it all over the dough.
  4. Roll the dough up using the long end.
  5. Cut rolls about 1 - 1 1/2 inches thick, depending on how large you want your rolls, and place them in a buttered pan.  Make sure the rolls do not touch.  You will need 2 round pans or a 9x13 pan.
  6. Let rise for about 30 minutes to 1 hour.
  7. Bake at 375 degrees until golden brown.
  8. Pour glaze on top as soon as you remove from the oven.
Notes
Depending on how large you cut the rolls, you will make approx. 10 to 12 rolls.

You can also use 1/2 recipe of yeast rolls or frozen bread dough instead of pizza dough.

A can of Pillsbury cinnamon rolls cost $2.50 for a can of 8.  Right there you can already see making them yourself is cheaper.   Since the recipe above makes more than 8 and is already $.28 cheaper. Not to mention, the recipe's cinnamon rolls are a lot bigger.

Chocolate Glaze

Tonight, I decided to make some chocolate chip cinnamon rolls.  I did not want normal icing, but I wanted a chocolate glaze to go on top.  I looked my vanilla glaze recipe and thought, I can make this work!  And I did.  And it tasted like chocolate milk when I was done!



Chocolate Glaze
Ingredients
2 cups powdered sugar
4 Tablespoons milk
1 Tablespoon butter, melted
1 teaspoon pure vanilla extract
1 Tablespoon cocoa powder

Directions
  1. Mix all ingredients together in a bowl.  Beat until smooth.
  2. Serve on your favorite desserts!
Notes
I have only used this once.  It was a little thicker than the vanilla glaze, but I liked that.  I figure if it is going to melt all ooey gooey on cinnamon rolls, it doesn't really matter if it is a little thick.  If you want it thinner, add a little more milk!

Last night, I wanted dessert.  I was making pizza dough away, so I decided to try making cinnamon rolls out of the extra dough.  I knew that cinnamon-sugar dessert pizza always turned out wonderful, so why not try it?

When my husband looked at these, he was skeptical on how they would taste.  He said he did not know how cinnamon and chocolate would taste together.  After he ate one, he apologized for being skeptical because they were "really good" and he also told me I had to make these for the next bake sale... :) So, from his reaction I'm sure this recipe is a keeper!  I think we both could have finished the pan, but we saved some for tonight's dessert!



Chocolate Chip Cinnamon Rolls
Ingredients
1 recipe pizza dough
1 cup sugar
1 cup brown sugar
2 teaspoons cinnamon
2 Tablespoons butter, melted
1/2 cup chocolate chips
1 recipe glaze (vanilla or chocolate)

Directions

Vanilla Butter Cream Frosting

My niece believes that when ever it is someones birthday, you must have cupcakes.  She was coming to visit us to celebrate my and my daughter's birthday, so I decided I better make cupcakes for her.  I grabbed a cake mix... heaven forbid that I, who strives to make everything homemade, would grab a cake mix! -- Hey, it was on sale AND I had a coupon and only paid $.19 for it -- Well, I looked on the back of the mix and it said "for 24 cupcakes..."  I was like NO.  I do not NEED 24 cupcakes.  I need 7... one for each person.  They would only be here one day and I did not want a ton of cupcakes to eat.  Well, I went searching for a cupcake recipe, where I had all the ingredients and it only made a small number of cupcakes.

I found this site: Joy the Baker.  There was a recipe for 12 cupcakes.  I have to admit, the cupcakes were an epic fail on my part.  I have no idea what I did wrong with the batter, but the icing was fabulous.  This butter cream icing recipe was attached to the before mention cupcake recipe.  I thought it that I would just try it instead of digging through my recipe box for my normal recipe.  It tasted great!  My daughter thought so too...  She licked the bowl almost clean afterwards and was covered in green frosting!  I did modify it slightly from the recipe on the site.  I did not have whole milk, so I used 2% and I accidentally grabbed the salted butter, but it still turned out wonderful.



Vanilla Butter Cream Frosting
Ingredients
2 cups powdered sugar
5 tablespoons butter, room temperature
2 tablespoons milk
1/4 teaspoon vanilla extract

Direction
  1. Beat the butter and powdered sugar together until mixed.
  2. Add the milk and vanilla and mix until well blended, about 5 minutes.
Notes
Recipe makes enough to frost 12 cupcakes.  To make enough for a two layer cake, just double the recipe.

Beat the frosting longer to make it fluffier.

Banana Pudding Dip


Banana Pudding Dip
Ingredients
8 oz cream cheese, room temperature
1 large package instant pudding mix (banana flavored or vanilla)
1 cup milk
3 Tablespoons powdered sugar
1 container Cool Whip
1 large banana, diced
10 vanilla wafers, crushed

Directions
  1. Whisk cream cheese until smooth.
  2. Add pudding mix, milk, powdered sugar and 1/2 of the Cool Whip to the cream cheese and blend well.
  3. Fold in the banana chunks.
  4. Place entire mixture in a bowl and smooth it out.
  5. Spread the remainder of the Cool Whip on top of the pudding mixture.
  6. Sprinkle the vanilla wafer crumbs on top.
  7. Let sit in refrigerator until ready to serve.
Notes
Use vanilla wafers as your dipping utensil.

You can omit the powdered sugar if you like the slightly tangier cream cheese/pudding mix.  I have to mask the cream cheese taste for a family member who would not eat it otherwise.

Cinnamon-Sugar Dessert Pizza

I was playing around with some pizza dough I had on hand and was really craving something with cinnamon and sugar.  I thought that I know how to make cinnamon rolls,  so making a dessert pizza would have the same concept, just flat instead of rolled up.  It turned out wonderful!



Cinnamon-Sugar Dessert Pizza
Ingredients
1/2 recipe pizza dough
2 Tablespoons butter, melted
1 Tablespoon cinnamon
1/2 cup brown sugar
1 recipe glaze

Directions
  1. Stretch dough out into a 12 inch circle.
  2. Coat the top of the dough with the butter.
  3. Sprinkle the cinnamon and brown sugar all over the top of the pizza.  If you like it sweeter, you can add more brown sugar.
  4. Bake in a preheated 450 degree oven until crust just turns golden brown, about 10 minutes.  
  5. Top with glaze right out of the oven.  
  6. Let cool slightly before serving.
Notes
Remember, if you are making dessert pizza using the pizza dough recipe, make sure to add and extra Tablespoon of honey to the batter so that it is a little sweeter.

3 Tablespoons milk
1 Tablespoon butter, melted
1 teaspoon pure vanilla extract

Directions
  1. Mix all ingredients in a bowl until smooth.
  2. Serve on your favorite desserts that use glaze! 
Notes
I never use the whole recipe for any given dessert, so I tend to only made half at a time.

Doughnuts

My all time favorite dessert is doughnuts.  I love them.  I would eat them every day if I could.  I especially love bakery style donuts.  I would rather go to a local bakery than a large doughnut chain.  Everywhere we have lived, I have had to find myself a bakery with good doughnuts to treat myself with every now and then.  Look at the bottom of this page to see my favorite bakeries in each place we have lived! If you do not have a good bakery in your town, I challenge you to make them yourself.  I find them very easy to make and taste just as good as ones you get at the bakery, not to mention a lot cheaper.  They can be time consuming, but, trust me!  It is well worth the effort!



Doughnuts
Ingredients
1/2 cup warm water
2 pkg yeast (4 1/2 teaspoons)
3/4 cup milk
1/3 cup vegetable oil or Crisco
1/2 cup sugar
1 teaspoon salt
2 eggs
4 1/2 cup all purpose flour

Directions
  1. Dissolve yeast and sugar in water.  Let sit until the mixture begins to foam, about 5-10 minutes.  If it does not foam, you need to start over.
  2. In a small pot, melt oil or Crisco into milk.  Keep on heat until milk has bubbles around the side.  Let cool.  Letting this cool is very important.  If you do not let it cool properly, it will kill the yeast and your doughnuts will be flat.
  3. Mix milk mixture, sugar, salt, eggs and 1 cup of flour until the mixture is smooth.
  4. Mix the remainder of the flour in slowly.  You may not need all of it.  Once it pulls away from the bowl, knead the dough for 2-3 minutes.  The dough should be elastic.
  5. Let dough rise until doubles.  Approx. 1-2 hours.
  6. Roll out about 1/4 inch and cut.  Let rise for another hour.
  7. Preheat 1 inch of oil to 350 degrees.
  8. Carefully move the doughnuts into the fryer.
  9. Fry on each side until golden brown.  Should not take longer than 1 minute on each side.
  10. Let cool on a paper towel.

Notes
This recipe makes 24 regular sized donuts.  I just make doughnut holes out of all the dough so I do not have to reroll any of the dough, nor do I have to worry about the doughnuts becoming misshaped before frying.

You can make just about any combination of doughnuts with this recipe.  You can fill them with your favorite fillings, dust them with powdered sugar, make cinnamon sugar like in the above photo, glazed, iced, etc.

Is home made worth it?

2 pkg yeast = $.76
3/4 cup milk = $.18
1/3 cup vegetable oil or Crisco = $.24
1/2 cup sugar = $.13
1 teaspoon salt = $.007
2 eggs = $.28
4 1/2 cup all purpose flour = $.45

Once recipe of doughnuts = $2.05.  Please keep in mind that this does not include glaze, icing or fillings.

Since one recipe makes 2 dozen, one dozen would cost approx. $1.03.  Each doughnut would cost $.09.  That, even when you add a few cents for toppings or fillings is a lot cheaper than going out to buy them.

I will compare these with most bakery style doughnuts.  I can buy one dozen assorted doughnuts for $7.00 at my local bakery.  So, since the above recipe also makes a dozen, you will save $5.97 buy making them at home. Plus, you will have the extra doughnut holes that you have to buy separate at the bakery.
