Leftover Veggies -- What to Do!
Ever cook veggies and have leftovers? Yes, we do all the time. A lot of times there is a spoonful of what ever veggie we had left. It isn't really enough to save for another serving, but if you are like me, you hate to throw out even that little bit! I read somewhere, I can't remember where, to freeze your leftover veggies. I have a freezer safe container that I just dump my veggies in when ever there are a little left. When it is full, it is time to make soup or stew to use them up!
I freeze leftover green beans, corn, lima beans, onions, peas and carrots.
I use these leftovers the most in my beef stew, but they will also work really well in a vegetable soup. Use your left over veggies instead of a bag/can of mixed vegetables. It will save you about a $1.00 in your recipe if you use approx. one can/bag worth of veggies.
