Strawberry Butter Cream Icing

Originally created to top a strawberry cake, it can work just as well on a vanilla cake or a chocolate cake. 

Strawberry Butter Cream Icing
Ingredients
8 oz frozen strawberries
1 stick room temperature butter   
1 lb powdered sugar

Directions
  1. Warm strawberries, or have them at room temperature.  Drain the juice but save it!
  2. Beat butter, powdered sugar and strawberries together.
  3. Slowly add the strawberry juice until you get the right consistancy.
Notes
If your icing gets too runny, just add some more powdered sugar.  If it is too thick, add more juice.

Makes enough to ice a 3 layer cake.
